BORUGULA UGGANI


INGREDIENTS :

1) Borugulu - 5cups.
2) Oil - 5tbs.
3) Onions - 3.
4)  Chillies - 3.
5) coconut-2 tbsp
6) Salt - required.
7) Mustered seeds - 2tbs.
8) Curry leaves - some.
9) Lemon juice - 10tbs.
10)Putnala pappu powder

Preparation:
1) Soak borugulu for 2mts.
2) Grind coconut,chillies and salt as powder
.
3) Take oil in the pan, add mustered seeds,curry leaves,chopped onions fry it lightly

4)Add borugulu,salt,coconut powder,Putnala pappu powder and lemon juice.

5) Serve borugula uggani hotly.

Beerakaya Curry





Ingredients :

Ridge gourds/beerakaya peeled and chopped into small pieces 3
Red chilli pwd 2tsp
turmeric 1 tsp
coriander pwd/dhania powder 1tsp
ginger garlic paste 1tsp
salt to taste
oil 2 tsp
mustard seeds 1/2tsp
curry leaves 2
onion finely chopped 1

chopped coriander leaves for garnish.

Masala powder:Grind all the below ingredients
Coriander powder-2tbsp
Coconut Powder-4tbsp
Garlic cloves- 3/4

Preparation :
1. Pre-heat oil in a cooking vessel. Add mustard seeds and let them splutter. Add the crushed garlic cloves and curry leaves and stir fry for a few seconds.

2. Add the chopped onions, sauté till the onions turn pink. Add the chopped ridge gourd pieces(Beerakaya), combine and cook on medium heat for 5 mts.

3. Reduce heat and cover with lid and cook further for another 7-8 mts. Add red chilli pwd, turmeric pwd, coriander pwd and salt and combine.

4. Add the water, Masala powder and bring to a boil, reduce heat, cover with lid and cook till all the water evaporates.

5.Garnish with fresh coriander leaves and serve hot.

Manga Dal(Mamidikaya pappu)


Ingredients:
  • 1 Raw Mango big
  • 1/2 cup Toor Dal
  • 5 Green chilli slit
  • 2 cups water
  • 1 Red chilli
  • 1/2 tsp hing
  • 1/2 tsp urad dal
  • 1/2 tsp chana dal
  • 1 sprig curry leaves
  • 1 tbsp coriander leaves
  • 1/2 tsp mustard
  • 1 tsp oil
  • Salt,to taste

Preparation:

Wash the mango,peel the outer skin.Chop into medium pieces. 
Pressure cook for 3 whistles raw mango,toordal,green chilli by adding water. 

wait till pressure settles down and then mash it with the masher and add salt. 

Heat oil and splutter mustard,urad dal and chanadal to light brown and red chilli, curry leaves,hing. 

 Add mango dal mixture 

Garnish with coriander leaves.Serve hot with rice


Note:Depending on the toor dal please reduce or increase the whistle.I normally keep 3 as it will be mashed almost.my mom doesn't cook again.just add the seasoning to the mango dal.

Rice Kheer(Sweet Rice Pudding)


This is a sweet dish of Rajasthan...This dish is best served chilled.It has lot of nuts and has a lovely rose flavour to it.....Please try this and let me know what you think...
Ingrediants:

Rice-100 gm
Milk-1 litre
Sugar-1 ½ cup
Cashew-50 gms chopped
Almonds(Badam)-50 gms chopped
Pistachios(pista)-50 gms chopped
Rose water-1 tblspn
Cardamom (Yelakai)-2 crushed
Ghee-2 tblspn

Method:

Soak basmati rice in water for 1 hour.Drain it and set it aside.



Heat ghee in a pan and fry rice in that for 3 min.Pour in the milk and let it come to a boil.Simmer for 30 min..

Add sugar and mix well.Let it cook for 15 min.Add in crushed cardamom and mix well.

Add in nuts and mix well.Drizzle some rose water in it and switch off the flame.

Serve warm or chilled.

Drumstick Pulusu


Ingredients:

Drumsticks-3 cut in length wise
onions -2
Tomato-2
Tamarind soaked in 1 cup water
salt to taste
coriander powder-1 tbsp
chilli powder-1 tbsp

Preparation:


Heat oil in a pan,add the cut onions. 


When the onions turn transparent add the tomato pieces.


After frying  them for 2 minutes add drumstick pieces and 
fry for a min then add salt,coriander powder and chilli powder.
Fry for 1 min.
 
Add tamarind watet,close the pan with a lid and allow it to cook until
 the drumstick  pieces become soft. 
serve hot with white rice
  
 

Soya Chunks Briyani / Meal Maker Briyani made in Pressure Cooker - Lunch Box Ideas




I love to cook with soya chunks because they are so healthy. They have the same texture of meat so they make a great substitute for chicken or any meat..They are high in protein too..I make a whole lots of stuff out of it like korma, briyani or cutlets..This is one of the simple briyani which is made out of that. This taste so good, now I am making this more often..

Ingrediants:

Soya Chunks – 3 cups cooked
Basmati Rice – 2 cups
Onion – 2 large sliced thinly ( Reserve some for deep frying)
Ginger Garlic Paste – 2 tblspn
Tomatoes – 3 large chopped finely
Green Chilli – 2 slit
Mint Leaves – ½  cup
Coriander leaves / Cilantro – ½  cup
Curd – 1 cup ( Thick and Unsour)
Chilli powder – 2 tsp
Coriander powder / Malli Podi – 1 tblspn
Turmeric Powder / Manjal Podi – 1 tsp
Soya Sauce – 1 tblspn
Salt to taste
Oil- 1 tblspn
Butter or Ghee – 2 tblspn
Lemon Juice- 1 tblspn

Whole Spices:
Cinnamon / Pattai – 1 small stick
Cumin Seeds / Jeerakam – 1 tsp
Star Anise – 1 small piece
Cardamom / Yelakai – 4
Cloves / Krambu – 4
Bay Leaf / Brinji Ilai – 1
Cashews – 1 tblspn
Raisan / Kishmish – 1 tblspn

Method:

Wash basmati rice in lots of water. Soak it for 30 mins. Drain and set aside till use.

Heat 1 tblspn of butter and 1 tblspn of oil in a pressure cooker. Add all wholes spices in the list and sauté for 1 mins.

Add onions and green chilli and sauté till golden brown. Add ginger garlic paste and sauté for a min.

Add in tomatoes and cook this till they turn mushy.

Add in coriander leaves and mint leaves and mix well.

Add curd, soya sauce, chilli powder, coriander powder, turmeric powder, salt and mix well.

Add in cooked soya chunks and mix well. Add in soaked drained rice and mix well.Pour in 3 cups of water and bring this to a boil. Simmer the flame and cook covered for 15-20 mins untill the rice is cooked and absorbed all the water.

Fry onions in a tblspn of ghee or butter and fry till golden brown. Pour this onions over the rice and mix gently.

Garnish with coriander leaves and a squeeze of lemon juice and serve.

Vegetable Pulav

Veg Pulav  is a healthy & delicious one pot meal with spicy vegetables and rice..!!

Basmati rice plays an important role in this rich & exotic rice dish. The flavorful aroma makes this pulav very inviting & makes it a special dish for quick & easy dinner options for parties & get-togethers.

It is best served with raitha..!!!
Ingredients:

Basmati Rice- 1 cup
onion - 1 chopped
tomato -1 chopped
Potatoes cubed-1 cup
Sliced carrot - 1 cup
Sliced Beans- 1 cup
Peas - 4 tbsp
Coconut- 3 tbsp 
Ginger - 1 inch
Garlic -2 tbsp
Green chilli-1 or 2
Cinnamon- 1inch
Cloves-2
Tumeric - 1/4 tbsp
Pudina leaves
Coriander leaves 

Preparation:
Grind coconut,garlic,ginger,green chilli, half onion and some coriander leaves.Make fine paste.

Heat oil in pressure cooker, add cinnamon,cloves,mustered seeds and cumin seeds,fry them.


Add coriander leaves and pudina leaves.Add onions,peas and green chilli  fry till onion become soft.Add tomatos fry untill tomatos become mashy.

Add ground masala cook for 5 min. Add chopped vegetables and mix well.cook untill vegetables are soft.

Add rice and 3 cups of water. pressure cook it upto one whistle. Add salt.

garnish with coriander leaves.

 It serves as a great meal with raitha or any curry..:)

Cabbage Toor Dal Curry

Cabbage dal goes well with hot rice topped with ghee...they tastes too good, different dhal with cabbage, can be also a side dish for chappathis,pooris....they will be mildly spicy..sure u will prepare often this dal once u tasted them..



Ingredients:

Cabbage-1  cup (cut into small pieces)
Toor Dal- half cup
Onion-1
Tomato-1
Ginger- 1 inch
Garlic- 2 or 3
Red chilli Powder-1 tbsp
Coconut powder- 2tbsp
Coriander Powder- 1 tbsp
Turmeric -1/4 tbsp
Cinnamon-1 inch
Cloves-2
Salt to taste
Oil-2 tbsp
Coriander Leaves

 Preparation:

In a blender add garlic,ginger,cinnamon,cloves,coconut and coriander powder, to a fine paste.  



Pressure cook toor dal with a cup of water n a pinch of turmeric powder until 3 whistles..


Heat oil in a kadai..add  the onions pieces n tomatoes pieces n cook them until the onions turns transparent and tomatoes a bit mushy..add the ground masala   and pour some water, add salt and chilli powder. close with the lid, cook them for a while.


.once they are done add the boiled cabbage and toor dal and cook them for a while ....

Garnish with coriander leaves.Serve hot with rice...
